Zebra Butter Cake



 My parents-in-law are not cake lover but they love butter cake, if I bake butter cake it will finish real fast.



When I saw this zebra butter cake, I immediately told myself I must try it. The butter cakes that I baked previously mostly call for milk but this recipe calling for milk powder which made me curious how the cake will taste like.


Recipe adapted from 萍水相逢 and 平平凡凡,简简单单.

Ingredients :
( A )

200g butter
160g castor sugar
210g eggs (about 4)
250g all purpose flour
10g milk powder
1 tsp baking powder
5g salt
50g water

(B)
7g cocoa powder

Method :
1. Beat butter and sugar till white and fluffy.
2. Add in egg one at a time and beat till well combined after each addition.
3. Fold in sifted flour, baking powder, milk powder and salt, alternate with water until well mixed.
4. Seperate batter into two portions. In one portion of the batter, add in the cocoa powder and mix well.
5. Then spoon in plain and chocolate batter in the cake pan alternately until finish.
6. Bake at pre-heated oven at 160 degree for 45 - 50 mins or until skewer comes out clean.

Verdict?
The cake is moist and very soft, very fragrant with the buttery and milky smell. It is so addictive that I cannot stop at one slice, I wanted to have more but I had to control since I need to take care of my waist hahaha... Just by looking at the photos, I am missing this cake, wish I can have a slice now :P. Definitely a keeper.

  4. Interesting, seldom see the use of water in cake recipes. I bet contributes the moisture of the cake. :) lovely zebra patterns, made me want to give it a try too. :)

  9. I like to bake butter cake but it's hardly for me and my hubby to finish up the whole cake. I love to try out this butter cake as the zebra effect looks so nice. Hopefully I could get someone to share some of the cake with me. I've bookmarked this recipe. Thanks for sharing!

    My mom loves butter cakes too.
    So does my MIL.
    It's an evergreen cake that never goes out of style.

    This is a very nice cake, not only of the zebra strips, your cake doesn't have a single crack! It's quite common for a pound cake to crack but urs just look perfect.

  32. Bee Bee, I believed too the cake is moist due to the water. Try it, you will like it too especially use your favourite cocoa powder :).

    Linlin, you can omit the milk powder and water by replacing the same amount of milk which is 50g.

    Yes Wendy, I think so that the water + milk powder is to replace milk but with milk powder, I do feel the milky taste is stronger.

  63. I'm a noob at baking. This will be my very first time baking a cake, so I'll be following your recipe closely. Could you explain in a little more detail how you make the alternate swirls in your cake? You mentioned alternate scooping the batter into the cake tin but I can't figure how the swirls come about. Thanks for sharing.

    I didnt use pipping bag to pipe out the batter, I used spoons instead. 1 spoon for original batter and 1 spoon for chocolate batter. I scooped 1 spoon of original batter and placed on the center of cake pan, then 1 spoon of chocolate batter on top of the original batter, then another spoon of original batter on top of the chocolate batter, repeat the process until finish all the batter.
